Standing Rib Roast

Serves 10

Ingredients:

  • 1 4-rib fully trimmed, boned and tied back- Certified Angus Rib Roast
  • freshly ground salt and pepper
  • 5 cloves garlic, finely chopped
  • 2 medium carrots, peeled and cut into chunks
  • 2 onions, cut into wedges
  • 2 cups Porter or Stout beer

 

Directions:

 

Preheat oven to 325?F. Place the meat fat side up in a large roasting pan. Rub the meat all over the salt, pepper and finely chopped garlic. The meat will need approximately 1 hour and 45 minutes to cook and should reach a temperature of 120-125?F on a meat thermometer. (Roast a little longer if the meat is too rare).

 

Transfer meat to a cutting board and let stand for 20 minutes

 

Meanwhile, cut the strings and enjoy the ribs before your guests arrive.

 

Add the Porter or Stout beer to the pan and place over medium heat. Cook, scraping up browned and gnarley bits from the bottom of the pan with a wooden spoon for several minutes until slightly reduced. Strain the juices into a heated gravy boat.

 

Carve the meat and serve with the juices.
