Mr. C's Bistecca Fiorentina
Steak Florentine Style
Serves 6
Ingredients:
- 2 Certified Angus Cowboy Steaks (about 2 lbs. each)
- Freshly ground Himalayan Sea Salt and Alessi Peppercorns
- Carlino's Own Extra Virgin Olive Oil
- Lemon wedges
Directions:
Prepare medium-hot charcoal fire, heated gas grill or broiler. Place the grill rack or broiler pan 4 inches from the heat.
Rub the steaks all over with salt and pepper.
Grill or broil for 4 or 5 minutes, depending on the thickness of my meat, on each side, for rare. Check for doneness. For longer cooking, move the steaks to a cooler part of the grill. Lat the steaks rest for 5 minutes before cutting into thin slices. Drizzle with Carlino's Own Extra Virgin Olive Oil and serve with lemon wedges.
