Basil Pesto Recipe

This month, we wanted to share an excellent Basil Pesto recipe. Basil originated in Genoa, Italy and is known for its distinct color and taste. It can be used in multiple ways. For example, atop a pizza, in a dip, marinade or dressing or sneak some into your omelet for a delicious breakfast alternative. The best part other than the flavor and its diverse usage is that it’s simple to make as well! This is a great condiment to create as summer winds down to a close.

This recipe makes about 1 cup

• ¼ cup toasted walnuts, skins removed
• 1 large clove garlic, peeled and crushed
• 3 packed cups basil leaves, roughly chopped or torn
• ½ cup parsley leaves
• ½ cup olive oil
• ¼ cup Parmesan cheese, finely grated
• ½ teaspoon lemon zest
• Freshly cracked black pepper
• Sea salt

All of these simple ingredients fit well inside of a food processor, with the walnuts and garlic first in until lightly chopped. Next add the basil and parsley, and pulse this until it begins to form a nice paste. Continue movement as you add olive oil slowly.

Transfer from the food processor into a bowl where you can mix in the Parmesan Cheese and lemon zest. Finish up by adding salt and pepper to your liking.
