Chicken Brasciola Stuffed with Prosciutto, Mozzarella and Sage
Ingredients:
- 6 Chicken Breast, butterflied and pounded
- 6 slices (about ¼ lb.) Prosciutto, domestic
- 6 slices Mozzarella
- 6 leaves Sage, fresh
- 1 cup All Purpose Flour
- ½ cup Carlino's Own Extra Virgin Olive Oil
- 1 cup Chicken Stock
Directions:
Lay chicken breast flat and top with sage, mozzarella and Prosciutto and roll up; secure with two toothpicks. In a pan, heat olive oil over medium high heat. Dredge the chicken in flour and sauté until golden brown on all sides. Transfer chicken to an ovenproof casserole dish. Pour chicken stock in dish and cover. Cook at 350F for 20-25 minutes, or until nice and tender.
