Goat Cheese Panino
(This recipe makes 2 sandwiches)
Ingredients:
- 2 Ciabatta Rolls or 8 slices Ciabatta Bread (you can find these in our homemade bread department)
- 4 Tbs. Carlino's Bruschetta Topping
- 2 Tbs. Fresh basil, chopped
- 6 oz. Goat cheese, thinly sliced (the easiest way to slice goat cheese is to use dental floss)
- 6 black (or green) olives, halved and pitted
Directions:
- Cut the rolls in half and toast on inside only.
- Spread some of the Bruschetta topping over each half and sprinkle with chopped basil.
- Arrange the goat cheese slices on top then scatter a few olives on top.
- Place under a hot broiler (or a panini grill) until the goat cheese begins to melt.
- Serve, garnished, with a spring of basil.
