Carlino's Mascarpone Pumpkin Flan
Yield 2 flan
Ingredients:
- 5 cups Canned Pumpkin
- 4 1/2 cups Sugar
- 1 1/2 Tbs. Cinnamon
- 1 Tbs. Ginger
- 1 tsp. Allspice
- 1 tsp. Nutmeg
- 30 Eggs
- 5 cups Half and Half
- 5 cups Heavy Cream
- 1 lb. Mascarpone Cheese
Directions:
Beat all ingredients except cream, half and half and mascarpone in 20 qt. mixing bowl. Beat in creams and mascarpone. Pour into prepared cups and place in water bath. Bake at 350 degrees F for at least 1 hour.
