Maytag Blue Sauce with Carlino's Homemade
Ingredients:
- 1 lb. Carlino's Homemade Angel Hair Pasta cooked as directed
- 2 oz. Pignoli (pine nuts) lightly toasted
For the sauce:
- 2 Tbs. Butter
- 2 Tbs. Flour
- 1 Cup Warm milk or cream
- 8 oz. Maytag Blue Cheese, crumbled
- Hot sauce
- Salt and pepper, to taste
Directions:
Melt the butter in saucepan and add the flour. Mix and stir constantly over medium heat for 2-3 minutes. Add milk (or cream) and simmer for 3-4 minutes. The sauce will be smooth and thickened. Add the cheese and hot sauce? stir until smooth. Toss sauce with pasta. Serve immediately in warm bowl, top with pignoli.
Note: Hot sauce works beautifully with blue cheese... be generous!
If you prefer a thinner sauce, add additional cup of cream.
