Pineapple Balsamic is in full-swing at Carlino’s and we have the perfect recipe for you to try it out! Produced exclusively for us in Northern California, our infused balsamic is refreshing and goes with any green salad. It is also complemented by many summer fruits, including grapefruit, which has a tart and subtle sweetness to the tangy zing of the pineapple. With this recipe, you can also look forward to a rich source of Vitamin C and natural antioxidants provided by the grapefruit to keep you feeling light and healthy for the summer.

Ingredients:

8 cups arugula, roughly chopped

2 grapefruits

1/2 cup dried pineapple chunks

1/3 cup pineapple balsamic vinegar

1/3 cup Carlino’s extra virgin olive oil

1/8 tsp salt

 

Instructions:

1. Cut the peel from the grapefruits with a knife and slice into sections. Use a bowl to collect the juice while cutting.

2. Place arugula on plate and add grapefruit sections.

3. Using a whisk, mix grapefruit juice, pineapple balsamic vinegar, olive oil and salt in a bowl to create dressing.

4. Sprinkle chunks of dried pineapple over plate.

5. Drizzle dressing over salad to taste and enjoy!
