Casanova lauded French Roquefort cheese as an aphrodisiac and it became the rage of the European courts, guaranteeing it a place in love/cheese history. February is a month of many special days. Valentine’s Day is one of them. Super bowl Sunday is another special day in February that you spend surrounded by the ones you love (or at least like) and surrounded by tons of delicious food and drink. It is the second-largest day for U.S. food consumption after Thanksgiving. A mouth-watering “gobble-gobble” for Super Bowl Sunday is Carlino’s exclusive collection of Tapenade, especially when paired with Carlino’s Signature Breadsticks.

A Tapenade is an olive-based spread featured in Mediterranean cuisine. Although it originated in the South of France it is now popular all over the world. The ingredients of Tapenade include black olives, caper berries, Extra Virgin Olive Oil and/or tomatoes, figs and balsamic vinegar mashed together into a thick paste.

Recipe: Roquefort-Stuffed Chicken Breast

Roquefort Societe has been an established Cheese Brand since 1842 and generously shares this recipe with the American Audience. Since Casanova lauded Roquefort as an aphrodisiac, serve this Casanova inspired recipe to your special someones on Valentine’s Day and brace yourself for hugs and kisses.
Yield: 6 Portions
Ingredients include:
6 split chicken breasts, skinned and boned**
6 slices prosciutto di Parma
6 oz. Roquefort Societe Blue Cheese
8 large mushrooms, thinly sliced and sautéed
¼ cup chopped fresh parsley
2 teaspoons dried tarragon
1 teaspoon Dijon mustard
1 tablespoon butter
Flour
1 tablespoon Carlino’s Extra Virgin Olive Oil
¾ cup dry white wine

Flatten chicken to ½ inch thickness. Spread top of each breast with small amount of butter and mustard. Make a pocket in each breast, using a sharp knife.

In a bowl, combine crumbled Roquefort Societe, parsley, dried tarragon and sautéed mushrooms.

Spread on prosciutto or ham. Roll and stuff into chicken breasts, secure with toothpicks (if necessary).

Dust with flour.

Sauté chicken in a large frying pan until lightly browned.


Add wine. Bring sauce to reduce slightly, spoon over chicken and serve immediately.
